This salad is my much healthier take on it, coming in at just 428 calories (with dressing & protein)! Try this delicious and refreshing salad for dinner tonight. Feel free to add some grilled steak, chicken, or a hard-boiled egg on top for more protein.

Ingredients

2+ cups of shredded kale (or mixed greens)

½ apple, diced into small pieces

½ cup grapes, sliced in half

½ cup celery, diced into small pieces

2 Tbsp (1/8 cup) crumbled goat cheese (or gorgonzola)

2 Tbsp (1/8 cup) sliced almonds (or crushed walnuts)

3-4 ounces grilled steak, chicken, or 1 hard-boiled egg

Directions: Combine all ingredients and mix together in large bowl with dressing. Serve cold.

Calories in Salad = 386 calories

Yogurt Honey Mustard Dressing:

2 Tbsp (1/8 cup) nonfat Greek yogurt

1 tsp honey

1/2 tsp mustard

sprinkle of salt & pepper
