Healthy Taco Salad

Ingredients: (makes 3 servings) 

4-5 cups romaine lettuce, chopped

1 large tomato, chopped 

1 avocado, halved, seeded, peeled, and diced

1/2 large white onion, chopped 

1/4 cup low-fat shredded mozzarella cheese

1/2 cup canned black beans, rinsed and drained

8 oz. (1/2 lb) ground turkey breast

3 Tbsp taco seasoning (I used Trader Joe's taco mix)

Directions

1. For turkey: In large skillet, brown 8 oz. (1/2 lb) ground turkey breast until crumbly. Add 3 Tbsp taco seasoning mix with about 1/3 cup water and mix well. Cook uncovered 8-10 minutes, stirring occasionally. 

2. Assemble the salad by placing chopped romaine lettuce in large bowl. Add all ingredients as seen in the first photo above. Mix together well and separate onto three serving plates.

3. Top salads with a small handful of crushed tortilla chips ("Food Should Taste Good" brand Sweet Potato Tortilla Chips shown in image) and fresh salsa if desired.
