Parsley Mashed Potatoes

Ingredients:

2 lbs of new or baby red potatoes (1-2 in. diameter), larger ones sliced in half

2/3 cup Chobani nonfat plain Greek yogurt 

2 scallions, cut half lengthwise & finely chopped

1/4 cup finely chopped fresh parsley (can add more as desired)

1 & 1/2 Tbsp olive oil

3/4 teaspoon salt (can substitute Mrs. Dash or garlic powder)

ground black pepper to taste

Directions

1. Steam potatoes by first bringing 1 inch of water to a boil in a large saucepan (fitted with steamer basket). Cover with lid and steam until very tender when pierced with a fork. Takes approximately 20-25 minutes. 

2. While potatoes are steaming, combine the yogurt, scallions, parsley, olive oil, salt (or mrs. dash) and pepper in a large bowl.

3. Mix the cooked potatoes into the yogurt mixture. Mash them up using a fork until they crumble apart and lightly clump together.
