Broccoli Cheddar Stuffed Potatoes


4 potatoes, rinsed and scrubbed 

1/2 cup plain non-fat Greek yogurt

3/4 cup cheddar cheese, shredded 

1 cup broccoli, chopped 

1/2 tsp paprika

1/2 tsp black pepper

pinch of sea salt

Optional: 1 Tbsp sliced scallions 


1. Preheat oven to 400 degrees. Using a fork, pierce holes in potato a few times on each side. You can either bake potatoes in oven (will take at least 1 hour), or in the microwave for 5 minutes on each side (total 10 minutes). 

2. As potatoes are cooking, chop up broccoli and steam or boil in a little bit of water for about 3 minutes. Slice scallions and set aside. 

3. Cut each potato in half lengthwise and scoop the potato out from each half, leaving about 1/4 inch behind to prevent potato skins from tearing. Using a food processor, potato masher, or hand mixer, combine the potatoes with 1/4 tsp paprika, 1/4 tsp black pepper, pinch of salt, yogurt, and 1/2 cup cheese.

4. Once mixture is well combined, fold in the broccoli and scallions using a spoon. Spoon mixture back into each potato skin, and top with the remaining paprika, cheese, and pepper. Place on baking sheet and bake in oven at 400 degrees for 15 minutes.
