Chocolate Chip Banana Bread Muffins


Makes 12-16 muffins 

3 ripe bananas 

1/4 cup honey 

1/2 cup plain Greek yogurt

1 egg

2 Tbsp unsweetened vanilla almond milk 

1 tsp vanilla extract

1  1/2 cups whole wheat flour 

1/4 tsp salt

1 tsp baking soda

1/4 cup dark chocolate chips 

1/4 cup chopped walnuts 


1. Preheat oven to 350 degrees F. Using a hand mixer or blender, blend together all wet ingredients (bananas, honey, yogurt, milk, egg, vanilla) until smooth and very well-combined. In separate large mixing bowl, mix together the dry ingredients (flour, salt, baking soda).

2. Add wet ingredient mixture to the dry and use large spoon (or whisk) to mix until just combined. Gently fold in the chocolate chips and chopped walnuts. 

3. Spray each muffin tin with nonstick cooking spray. Spoon batter into each muffin tin and bake for 20-25 minutes. Should be just slightly golden on top. Let cool for about 5 minutes and enjoy while warm! These also refrigerate well, just warm up in microwave for about 10-20 seconds before eating!
