Chickpea Salad Sandwich


Makes 3-4 servings. Prep time 15-20 minutes.

1 can (15 oz.) chickpeas (garbanzo beans), rinsed and drained 

1/4 cup nonfat plain Greek yogurt

2 tsp mustard 

1/4 cup celery, diced 

1/4 cup onion, diced 

1/4 tsp salt 

1/4 tsp pepper 

optional: 1/4 tsp dried dill


1. Drain and rinse chickpeas and place in large mixing bowl. Optional step: remove outside skins from chickpeas (these should come off very easily by placing chickpeas first on a paper towel and wiping clean). Mash up the chickpeas with a fork. 

2. Chop the celery and onion and add to mashed chickpea mixture. Add all other ingredients and mix well. Enjoy as a salad or as a sandwich between two slices of whole wheat bread.
