Mediterranean Chicken


1 1/2 lb boneless, skinless, chicken breasts (sliced into smaller strips) 

1/4 cup olive oil 

1 lemon, juiced 

3 cloves garlic, minced 

1 Tbsp fresh rosemary, chopped 

3/4 Tbsp fresh oregano, chopped

1 Tbsp fresh thyme, chopped 

1/2 tsp black pepper

1/4 tsp sea salt 



Greek Chicken


1. Combine all the above ingredients into a shallow bowl or casserole dish and stir until well combined. Place chicken breasts in mixture and marinate for several hours (covered) in the refrigerator. (I marinated for 6 hours, however this could also be done overnight.)

2. Preheat stove over medium-high heat. Lightly brush skillet with olive oil. Cook chicken about 10-15 minutes each side. Time will vary depending on size of strips.


3. Serve chicken with a side of quinoa salad, on top of a Greek salad, or use to make gyros.
