Parmesan Baked Edamame


9-12 oz package of fresh (or frozen) shelled edamame (green soybeans)

1 Tbsp olive oil 

1/4 cup parmesan cheese, grated

1/4 tsp black pepper

1/4 tsp garlic salt (for a spicy kick, swap out with 1/4 tsp chili powder or red pepper flakes)

pinch of sea salt (optional)


1. Preheat oven to 400 degrees. If soybeans are frozen, thaw by rinsing under water. Place in large bowl and add olive oil, parmesan cheese, and seasonings. mix together well. 

2. Spread on baking dish (sprayed with nonstick cooking spray) and bake for 15-20 minutes (until crispy).
