1 cup quinoa, uncooked
1/4 cup feta cheese, crumbled
1/2 large cucumber, diced
1 pint grape tomatoes, diced
1 1/4 Tbsp fresh oregano, chopped
1 Tbsp white wine vinegar
2 Tbsp olive oil
1/2 tsp black pepper
1/4 tsp sea salt
1. Combine 1 cup uncooked quinoa in pot over stove with 2 cups water. Once you bring it to a boil, simmer covered for 15 minutes. Fluff with fork once finished cooking.
2. While quinoa is cooking, chop cucumbers and tomatoes. Make the dressing by combining in a small bowl the oregano, olive oil, vinegar, salt, and pepper.
3. Once the quinoa has cooked, add the tomatoes, cucumbers, and cheese. Mix in the dressing until everything is well combined. Serve cold.
