1 cup plain Greek yogurt
1 large cucumber, peeled and deseeded
1 1/2 tsp dried dill (or 1 Tbsp fresh)
3 cloves garlic, minced
1/2 tsp black pepper
pinch of sea salt
Peel and deseed cucumber, using paper towels to soak up any excess liquid. If you skip this step, your tzatziki will be very watery! Combine all ingredients in food processor and mix until well combined. Store in refrigerator for several hours to enhance the flavor of the dill. Use as topping on wraps or gyros, over meat or poultry, or as a dip for fresh sliced vegetables.
