Crockpot Steel Cut Oats

Ingredients (will make 8 servings): 

2 cups steel cut oats

8 cups liquid (I use 4 cups water, 4 cups unsweetened vanilla almond milk…could do all 8 cups water or all 8 cups low fat milk/almond milk)

Topping Ideas: Fresh berries, sliced banana, crushed walnuts, sliced almonds, nut butter, cinnamon, ground flax or chia seeds, unsweetened shredded coconut flakes

Directions:

1. Combine steel cut oats and liquid in crockpot. Leave crockpot on low for 6-8 hours (stirring occasionally to prevent sticking).

2. Once oats have thickened, turn off crockpot. Place in large tupperware container or individual containers and let cool before covering with lid. Store in refrigerator. 

3. If poured into large container, separate portions by cutting out 8 servings with knife. Each morning, place in bowl and reheat for 45-60 seconds. Can add more milk and any toppings of choice. 

Toppings: 1/2 Tbsp unsweetened shredded coconut flakes, 1/2 sliced banana, 3 strawberries, 2 Tbsp crushed walnuts, 1/4 cup blueberries
