Cauliflower Fried Rice

This rice looks and tastes just like fried rice, with lower calories and carbohydrates! This rice pairs excellent with my honey garlic chicken recipe. 

Ingredients: 

2-3 cups raw cauliflower (or one 12 oz. bag)

2 Tbsp sesame oil (or olive oil) 

3 Tbsp low-sodium soy sauce (or Bragg's aminos)

1/2 cup white onion, diced

1/2 cup peas

1/2 cup carrots, diced

2 eggs

1/2 tsp garlic powder (or 2 cloves garlic, minced)

handful of chopped scallions (for topping)

Directions:

1. Chop raw cauliflower into smaller florets and place in food processor, pulsing until it is the consistency of rice. You don't want to over pulse it as it will get mushy!

2. In a large skillet or wok, heat oil over medium heat. Dice the carrots and onions and use fresh (or thawed if frozen) peas. Saute the carrots, onions, and peas together until tender. Add either 2 cloves minced garlic (for stronger garlic taste) or just 1/2 tsp garlic powder. Move the sautéed veggies off to the side of the pan and pour in the 2 eggs (beaten) to scramble separately.

3. Add the "rice" cauliflower to the pan along with 3 Tbsp soy-sauce and cook for about 3-4 minutes, mixing all ingredients together. Remove from heat and serve with fresh scallions on top. Pairs excellent with my honey garlic chicken recipe!
