Makes 16 cookies
2 cups almond flour/meal (or 1 cup almond flour & 1 cup gluten-free rolled oats)
1/2 tsp baking soda
1/4 tsp salt
1/3 cup maple syrup
2 Tbsp coconut oil
1/2 cup dark chocolate chips
1. Preheat oven to 350 degrees.
2. In large bowl, combine dry ingredients (almond flour, baking soda, salt). In separate bowl, combine wet ingredients. Egg and maple syrup should be at room temperature. Coconut oil should be melted (place in microwave for 10 seconds).
3. Add wet ingredients to dry and whisk until well-combined. Fold in the dark chocolate chips (Enjoy Life Brand if needing dairy-free).
4. Using a cookie scoop (or spoon), drop dough onto cookie sheet (sprayed with nonstick cooking spray). Make sure to leave enough space between each cookie, and gently press down each cookie to flatten. Bake for 12-14 minutes. Allow cookies to cool for a few additional minutes on cookie sheet before placing on wire rack or plate. Enjoy!
