Ingredients: 

1 lb. (16 oz.) fresh salmon

3 Tbsp honey

1/2 Tbsp fresh lemon juice

1/2 Tbsp olive oil 

1/2 Tbsp white balsamic vinegar

1/2 Tbsp thyme, fresh

1/2 tsp garlic, minced

1/4 tsp sea salt 

1/4 tsp freshly ground black pepper 

 

Directions: 

*Could substitute fresh thyme with dried thyme (only use 1/2 tsp instead of 1/2 Tbsp if using dried) 

1. Preheat oven to 400 degrees F. Rinse fresh salmon under cold water and dry thoroughly with paper towel. Cut into 4 fillets (4 oz. each). 

2. Prepare "foil packets" for salmon fillets by spraying lightly with nonstick cooking spray and placing on baking sheet. Place a salmon fillet into each foil packet and fold the sides of the foil up over the salmon, creating a "boat" type shape but leaving the top open to pour in herb mixture. 

3. Prepare herb mixture by combining honey, lemon juice, olive oil, vinegar, garlic, thyme, sea salt, and pepper in small bowl. Mix together well and pour evenly over each salmon fillet. Tightly close up each foil packet.

4. Bake in oven for approximately 12-15 minutes (time may vary depending on thickness). This meal pairs well with green beans, broccolini, or asparagus and rice. Enjoy!
