Shrimp & Broccoli Stir-Fry

Ingredients:

Makes 2 Servings

1/2 lb. shrimp, peeled and deveined

1 Tbsp oil (sesame or olive oil)

2 Tbsp honey

1 & 1/2 Tbsp reduced-sodium soy sauce

1/2 tsp ginger, minced (or more, if desired)

1 clove garlic, minced

1 cup broccoli, steamed (can use fresh or frozen)

1-2 cups brown rice

Directions:

1. Combine oil, honey, soy sauce, ginger, and garlic together in small bowl to make marinade. Set aside half of the marinade to use later (in step 3), and pour the other half into a large Ziploc bag with shrimp and let marinade for at least 20 minutes. 

2. Steam broccoli and set aside. 

3. In a large skillet or wok, heat 1 tablespoon oil over high heat. Add the marinated shrimp and sear on both sides for about 1-2 minutes per side. Reduce heat to low, and add in steamed broccoli and other half of marinade that was set aside in step 1. Stir together until sauce is well combined with shrimp and broccoli, and lay on a bed of brown rice. Garnish with sesame seeds and chopped scallions. Enjoy!
