Crockpot Vegan Chili

Makes 6 servings

Ingredients:

3 cups low-sodium vegetable broth

1/2 cup uncooked quinoa

1/2 cup small green lentils

1 (15 oz.) can tomato sauce

1 (15 oz.) can black beans

1 (14 oz.) can diced tomatoes

1 small onion, diced

1 green pepper, diced

4 cloves garlic, minced

1 & 1/2 Tbsp chili powder

1/4 tsp cayenne pepper

1 & 1/2 tsp ground cumin

1 tsp oregano

1 tsp salt

1 tsp black pepper

Directions:

1. Mince onion, green pepper, and garlic. Drain & rinse black beans. Add all ingredients to a crockpot and cook on low for 5-6 hours. (If wanting a spicier kick, add in a diced jalapeño or 1/2 tsp red pepper flakes.)

2. Top with avocado, cheese, crushed tortilla chips, or a side of whole grain cornbread. Enjoy!
