Ingredients

2 cups rolled oats

½ cup unsweetened shredded coconut

1/3 cup sliced almonds

½ tsp vanilla extract

¼ cup honey

2 Tbsp coconut oil

 

Directions

 

1.     Combine dry ingredients in mixing bowl. Add honey, vanilla extract and coconut oil and mix until well combined.

 

 

 

.     Spread mixture out into thin layer on baking sheet. Bake in preheated oven on 325 degrees for 8-14 minutes. Start with 8 minutes, then stir the granola to prevent burning and cook an additional 4-6 minutes as needed, checking and stirring every 2 minutes to prevent burning.

 

.     Take granola out of oven and let cool before transferring to container. Optional: can add diced up dried fruit such as raisins, cherries, apricots, or cranberries. Serve with milk or yogurt and fresh berries for a delicious and healthy treat!

 

Recipe makes about 4 cups. Calories: 96 calories per 1/4 cup serving; 192 calories per 1/2 cup serving.
