Vegan Baked Apple Oatmeal Casserole

Servings: 6 Total Time: 40-45 minutes

Ingredients

3 cups rolled old fashioned oats

1 tsp ground cinnamon

1 tsp baking powder

1/4 tsp salt

1/2 cup unsweetened applesauce

2 & 1/2 cups unsweetened almond milk

3-4 Tbsp maple syrup

1 & 1/2 Tbsp ground flaxseed

1 large apple, finely diced (I recommend Fuji or honeycrisp)

1/2 cup walnuts, crushed

Directions

1. Preheat oven to 350º F. Spray a 9x9 inch baking pan lightly with olive oil.

2. In a large bowl, add all of the ingredients together and mix until well combined. Pour into prepared baking pan.

3. Bake for 35 minutes or until inserting a toothpick in middle comes out clean. Serve immediately and top with a drizzle of maple syrup, more fresh apple slices, almond butter, or chopped walnuts. If reheating leftovers, warm-up in microwave for about 60 seconds.
