Whole Grain Cornbread

Makes 9 servings

Ingredients:

1 cup cornmeal (recommended: Bob's Red Mill)

1 cup whole wheat flour 

1/2 tsp salt

1 tsp baking soda

1 Tbsp olive oil

1/4 cup unsweetened vanilla almond milk

1/4 cup honey

1 -7 oz. container (about 1 cup) 2% plain Greek yogurt

Directions:

1. Preheat oven to 400 degrees F. 

2. In large bowl, combine all dry ingredients (cornmeal, whole wheat flour, salt, baking soda) and mix together. Add in the remaining ingredients (oil, milk, honey, yogurt) and mix gently until well combined. 

3. Pour batter evenly into an 8x8 pan (sprayed with non-stick cooking spray). Top with a drizzle of honey before baking, then bake for 20-25 minutes (until toothpick comes out clean!) Enjoy at your next BBQ or paired with my Sweet Potato Turkey Chili

To make these into muffins, spray each muffin tin with olive oil spray and pour spoonful of batter into each (will make 10-12 muffins) and bake for 14-15 minutes.
