6 small sweet potatoes (about 2 pounds), peeled, quartered and sliced
2 teaspoons salt
2 teaspoons black pepper
2 teaspoons garlic powder
2 tablespoons extra virgin olive oil
nonstick cooking spray
Preheat your oven to 450 degrees. In a small bowl, pour the oil and stir all the seasonings into the oil. In a large bowl place the sliced sweet potatoes. Pour the seasoning mixture over the potatoes and using tongs or your hands try to evenly mix and coat the sweet potatoes. Spray a large baking sheet (you may need 2 baking sheets) with cooking spray. Lay the sweet potatoes on the baking sheet, do not overlap. Use the cooking spray to lightly coat over the sweet potatoes. Bake for 10 minutes, turn them, spray with cooking spray again and bake 10 more minutes until tender. Cool for 5 minutes before serving.
