Makes 4-5 Burgers
1 lb 99% lean ground turkey breast
3 chipotle peppers in adobo sauce, finely diced (see photo below!)
1 Tbsp red onion, diced
1 clove garlic, minced
1/2 Tbsp cilantro, finely diced
1/2 Tbsp chili powder
1/2 tsp salt
1/2 tsp pepper
Topping: large spoonful of Peach Salsa and sliced avocado
1. In medium bowl, mix together all above ingredients until well-combined. Form 4-5 patties. If you want an extra spicy burger, add more chipotle and chili powder.
2. Preheat skillet with olive oil on medium-high heat (or cook on outdoor grill). Cook about 3-4 minutes each side until no longer pink. Serve on a whole wheat bun and top with a large spoonful of freshly made peach salsa and sliced avocado. Serve with a side of tortilla chips or baked sweet potato fries.
